Production Notes
These grapes were sent directly to the press whole cluster. The juice was pressed to tank, and then cold crashed. We racked the juice off heavy solids to allow the brightness to shine through. It was fermented and aged in stainless steel. The Albariño was kept cold throughout its life to retain as much natural dissolved CO2 as possible to lift the pallet with the perception of freshness and a light spritz.
