History: Because of the Pacific’s cooling fog and winds, the North Coast in Sonoma County is a region where fruit is allowed to ripen more slowly on the vine, producing balanced, structured, and food-friendly wines. Alexander Valley is an incredible place to grow wine–and in particular, Cabernet Sauvignon. As the days begin to lengthen, the weather quickly warms up, yet the vines are close enough to the Pacific to benefit from its cooling effects–ideal conditions for great Cab.
Tasting Notes: Coated layers of dark fruit, black licorice, cedar box, cassis, and sage explode on the palate to then be reined in by firm tannins and brisk acidity pulling through the finish. The extra time in reserve gives this wine a fantastic balsamic note, which lifts it on the palate.
Pairing Suggestions: Kielbasa bites with tart cherry jam, taco dip, or your favorite dressed hot dog.
