Vinification Details:
Grapes are hand-harvested from organically and biodynamically farmed vineyards in Allan and Valaurie, Drôme, France, planted on sandy clay-limestone soils.
Spontaneous fermentation with indigenous yeasts.
Maceration on skins for 2 months.
Aged for 5 months in amphorae (Tinajas).
Bottled unfined, unfiltered, with no added sulfites.
