Les Vins Pirouettes Description
Stéphane Bannwarth of Domaine Bannwarth cultivates 40-year-old vines on clay-limestone soils in Ammerschwihr. The vineyard has been certified organic since 2004 and biodynamic (DEMETER) since 2012. The blend consists of Riesling (7%), Pinot Gris (37%), Gewurztraminer (50%), and Muscat (6%). The grapes are hand-harvested, gently crushed, and briefly macerated on skins. Fermentation occurs in stainless steel tanks with indigenous yeasts and no added sulfur, resulting in a total of 15ppm SO2. The wine, which is unfined and unfiltered, is bottled in the fall following the harvest without any additional sulfur. It features a salmon-pink orange color and offers aromas of roses and exotic fruit, with the depth of Pinot Gris and the lift of Riesling, making it a versatile skin contact wine suitable for various occasions.
