Derived from the 2019 vintage, Benoît Dussot's NV Brut Nature Les Semblables (Boréal) is derived from north-facing holdings. Wafting from the glass with scents of crisp pear, citrus oil, white flowers and buttery pasty, it's medium to full-bodied, pillowy and chiseled, its fleshy core of fruit girdled by racy acids.

00% Pinot Noir, a white wine with the palest shimmer of pink. Crunchy red and green apple on the nose, hints of pepper and cinnamon spice. Light and fresh with an admirably creamy mousse, given it had just two years on lees – produced from the warm 2020 harvest, disgorged in July 2022 without dosage – this estate’s second release will benefit from further bottle age.

The NV (2020) Brut Nature Boréal is a pure Pinot Noir, grown on north-facing parcels only, fermented and aged in barrel. Both apple blossom and creamy red apple flesh mark the scented nose. The relatively short tirage means that the mousse is frothy and very lively. A yeasty backdrop adds more texture to this bone-dry and very pure, bright wine. Impressive despite its youth, bright, superbly pure and with lasting freshness. A winemaker to watch.
