The alter ego of Boréal is the NV Brut Nature Les Semblables (Austral), derived from south-facing vineyards and, in this case, from the 2019 vintage. Delivering aromas of pear, crisp stone fruit, clear honey and freshly baked bread, it's medium to full-bodied, broad and pillowy, with a richer, more vinous personality and a long, saline finish. Of course, as I remarked to Doussot, the two alter egos would surely make an extremely complementary blend, even if that would fly in the face of the maison's Burgundian philosophy.

The NV (2019) Brut Nature Austral is a pure Pinot Noir from south-facing parcels only, made in barrel. It opens with inflections of apricot against red apple flesh and white pepper. The palate is creamy with subtle mousse and sprays with fine freshness on this pure, expressive wine. Lovely and frank personality, great purity and a streak of almost stealthy elegance. Intriguing and beautiful with a bone dry and lasting finish.
