Alvear Description
A Superior Quality blended wine from different plots in the Sierra de Montilla. Made with Pedro Ximénez grapes from old bush-cultivated vines in the Rio Frío Alto and Cerro Macho areas. After manual harvesting and destemming, the grapes are pressed directly and fermented separately in concrete vats. The wine then rests in the same vat on its lees for approximately eight months, until late spring following the harvest, under flor yeasts from each plot.
COLOR: Straw yellow NOSE: Fruity notes of ripe apple and the distinctive subtlety of anise stand out. The hint of veil yeast is present, reminiscent of the crumb of classic bread.
PATELET: Fresh and fruity (apple), with a touch of acidity and structure achieved by harvesting at the right time through tasting the grapes, seeking their maximum potential.
